
Planning a Thanksgiving Menu
The arrival of November 1st has become synonymous with one thing in my world: I need Thanksgiving recipes! Why do I prep so far in advance? Well let’s just say it’s because I like to change my mind thirteen hundred times. Plus, with the impending launch of our annual holiday gift guide, and Black Friday | Cyber Monday Travel Deals, I don’t have the luxury of multi-tasking the week of Thanksgiving.
So this year, I decided not only to kick-off the holiday season with a proper Thanksgiving 101 post, but share every component of Turkey Day. From tablescape and Thanksgiving decorating ideas, to menu planning, recipes, and playlist, I’m dishing and delivery all the items and ingredients that make me even more grateful for this wonderful holiday with the ones we love most.

Mix Tape | Creating The Perfect Thanksgiving Vibe
Curating a playlist for your next holiday event it not as easy as it seems. Typically, when you are entertaining in your home, your guests don’t all share the same love for one musical genre, so you have to find the ideal blend of background music. Thankfully, platforms like Spotify make this task much easier find a solution than it seems. I first start with a feeling. Then I think about my guests and the overall energy and tone I want to set for before dinner, during dinner, and afterwards as well. Before I know it, I’m making a mental list of artists that I can see crossing the multi-generational boundaries that will be in attendance. Historically, I’ve always gravitated towards songs and bands that embrace the 70’s AM radio and Laurel Canyon feel, mixing contemporary and classic artists. You know what I’m talking about, everything from Hall & Oates and Counting Crows, to Fleetwood Mac and Pearl Jam. I stay away from anything too uppity, but fun with a great sound. Optimistically strive for a collection of 100+ songs guaranteeing a few decent hours of jams. Thanksgiving Leftovers Recipes for Turkey Sausage Wild Rice and Cranberry & Pecan filled Heirloom Squash drizzled with a Macadamia Sauce

Ingredients
- 1 package turkey sausage, casings removed
- 4 Tablespoons olive oil
- 1 cup small diced onion
- 2 cups wild rice mix
- 5 cups chicken stock
- 1 Tablespoon minced fresh thyme
- 1 teaspoon minced fresh sage
- 1/2 cup chopped pecans
- 1/2 cup dried cranberries
- Roughly chopped flat-leaf parsley
- 2 small/medium heirloom squash
- Salt and pepper to taste
- 1 cup roasted unsalted macadamia nuts
- 1 Tablespoon nutritional yeast
- 1 teaspoon amino acids
- 3 garlic cloves
Instructions
- TURKEY SAUSAGE RICE
- Set Wolf Gourmet Multi-Function Cooker to sauté/sear. Pre-heat while prepping ingredients.
- Sauté garlic until translucent. Add turkey sausage and cook thoroughly.
- Add thyme, sage, and rice. Sauté 1-2 minutes add 4 cups of chicken stock
- Change setting to Rice setting. Tape red dial to setting "2" for wild rice.
- Fold in the minced parsley (to taste) just before service.
- ROASTED HEIRLOOM SQUASH
- Preheat Wolf Gourmet Counter Top Oven to 350 Roast with the Convection turned on
- Cut squash in half and remove seeds
- Place face down on roasting pan with rack
- Roast squash approximately 30-40 minutes until knife tender
- When tender, remove and place cavity up. Drizzle with olive oil, salt, and pepper
- MACADAMIA SAUCE
- Place macadamia nuts, 1 cup chicken stock, yeast, amino acids and garlic into the Wolf Gourmet Blender and set to "Puree"
