Once upon a time, at South Coast Plaza, a little girl met a chef, and while this girl was convinced she was going to order a heaping plate of Truffle Macaroni and Cheese, he threw a curve ball and served this little tyke octopus.


True story. The chef was Executive Chef, Seakyeong Kim, and the little girl was JetSet Tot. Charlie Palmer at Bloomingdale’s invited The JetSet Family for a meal we will that not only we will cherish, but will remember for a very long time. As I mentioned, JetSet Tot is going through a major truffle phase and she was dead set on getting the Truffle Mac & Cheese. Of course this lil’ foodie had alternative plans to try everything else that was placed within reach; however she had no idea Chef Kim was going to present a magical creature she had only read about in books. JetSet Tot knew immediately what it was by the tentacles and her eyes grew to the size of dinner plates. “I want to try octopus!” The dish was Octopus A La Plancha with Pee Wee Potatoes, Celery Pesto, Paprika, and Kalamata Olives. Within minutes she devoured nearly the whole entire plate herself. I can understand why, it was absolutely one of the most delicious dishes I have ever tasted. I actually thought JetSet Dad and JetSet Tot might end their relationship over who was going to get the last bite!


When dining with JetSet Tot I often joke that she is a chef’s toughest critic. Here is a six year old who appreciates Octopus A La Plancha and then will request PB & J in her lunch the next day. She is truly the one who can make or break a restaurant. Her voice is honest, she is not swayed, she is willing to try everything, and if it tastes good, she will eat every. last. bite. If you’re lucky, maybe she’ll offer you a bite. And she agreed, our meal was perfection.

There was such a huge amount of thought put into each and every plate that was placed on our table. Understanding the fine line of trying to impress, and actually caring enough about the likes and sophistication of your guests is a gift. That’s where Chef Kim shines. He was able to create a menu for our family that evening capturing every small detail of why we love and enjoy fine-dining so much. Experiences like these are rare, so when they present themselves, you need to embrace them for all it is worth and then share it with everyone you know.

Classic Vanilla, Honey Thyme, Cafe Au Lait


Vanilla Tarragon Bavarian, Crispy Black Sesame Phyllo, Olive Oil Ice Cream, Hibiscus Coulis
